#BacktoSchool Brownies!

Goose and I are so very thankful, for many things really.  But one of the things that tops our list is that they are not difficult to please.  They are still using last year’s backpacks and lunch bags – both are still in great shape.  The Master Seamstress bought them new interlocking sandwich and snack boxes to go in those lunch bags and they are pretty sure they have hit the jackpot.

So, this week, when they went back to school, E1 had a simple request:  brownies for his lunch.  So, while he started school on Tuesday, E2 and I made up some back to school brownies.

Fudgey Back to School Brownies – Adapted from Hershey’s Sweet Treat Cookbook

  • 3/4 cup cocoa
  • 1/2 tsp baking soda
  • 2/3 cup butter, melted
  • 1/2 cup boiling water
  • 2 cups sugar
  • 2 eggs
  • 1 13/ cups flour
  • 1 tsp vanilla
  • 1 tsp salt
  • 1 cup toffee bits

Sift your cocoa and baking soda together in a large bowl.  Pour in half of the melted butter and stir.

Add in the boiling water and stir until thick and smooth.

Stir in sugar, eggs, and remaining butter and mix until smooth.

It will look very runny and smooth.

Mix in the flour, vanilla, and salt and stir until smooth.

Pour in a generous cup of toffee bits.  Or chocolate chips.  Or flavoured chips.  If you are not making these to send to school (or happen to attend a school that does not have a nut ban), feel free to use nuts of your choice.

My quality assurance team, as always, was hard at work.

After the brownies cooled, I popped them into a big ol’Ziptop bag and threw them in the freezer.  School lunch snacks conquered for another day!
