Apple Toffee Tarts

I came across this quick and easy recipe the other day and had to give it a whirl.  I and all my family are really glad we did.

This recipe is a snap, especially if you use pre-made tart shells.  I would honestly recommend the Tenderflake mini-shells.  To make this recipe, you will need more than one box, as it really does need 24 tarts and there are only 18 in a box.

Chop up the apples into uniform pieces.  That big chunk in there?  Never seen him before.  But don’t worry – he was dealt with.

Dump all the ingredients in the bowl together.  Toffee pieces = Skor bits.

After mixing it all together, you can pop it in the microwave for 30 seconds to  melt the butter and give it a stir again.  If you end up with some ‘juice’ left over, don’t pour it into the tarts, it will increase the likelihood of boiling over and just make a sticky and soggy mess.

Get out two dozen mini tart shells.  If you are an overachiever, make your own and present them here.  Otherwise, join the ranks of the rest of us and use the pre-fab stuff.  And please ignore the fact that there are not 24 here.  More came out of the next box and filled up the tray.

I should mention that I did not actually make 24 tarts.  A couple of them met an unfortunate and early demise…  It is hard to get good help around here.

A disher or small ice cream scoop works great for uniformly filling things like tarts.  Try it, you’ll love it.  I promise or your money back ;)

The finished product.  These do have a very short shelf life – 3 to 4 days tops.  After that, the moisture from the apples will soak into the pastry and everything will get soggy.  That’s not really so tasty.  But I wouldn’t really worry.  It is unlikely they will be around that long.
